- 500 ml water
- 100 g sugar
- 20 g fine salt
Method
Warm only until the sugar and salt dissolve. Pour over suitable prepared vegetables in a clean food-safe container, cool promptly, cover, label and refrigerate.

- 250 ml olive or rapeseed oil
- 1 kg diced onions
- 60 g crushed garlic
- 250 g tomato purée
- 5 kg chopped tomatoes
Method
Soften onions, add garlic and purée, then add tomatoes and simmer until the raw acidity has mellowed. Season for the final dish, not the base.

- 2 litres potable water
- ½ washed cucumber, sliced
- 1 washed lemon, sliced
- Small handful washed mint
- Plenty of safely produced ice
Method
Prepare in a clean food-safe jug, keep chilled and position where the team can access it without contaminating food-preparation areas.
CONTROL: Make fresh for the shift and discard remaining fruit and herbs at close. Plain drinking water should always remain available.
